I love my new personal blender. I’ve owned it for less than a month and mostly I’ve been using it for fruit smoothie action. Today however I decided to try a bit of lazy breakfast prep using it… Verdict, Winner!
1 cup baby spinach
1 whole egg
1 cup egg whites
1/4 Spanish onion
5 cherry tomatoes
Blend all for 30 seconds (or less if it’s all chopped).
Spray pan with a quick bit of spray oil.
Pour in the mix and let cook.
When the edges come away from the pan flip the omelette closed into a half moon shape.
Flip the whole lot over to seal it up.
